Guest guest Posted June 23, 1999 Report Share Posted June 23, 1999 * Exported from MasterCook * Smooth Vegetable-Peanut Soup Recipe By :The City Gardner's Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Soups, Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup chopped onions 2 cloves garlic 1 tablespoon olive oil 3/4 cup diced carrot 2 stalks celery -- sliced 2 cups diced potato 1 cup chopped leeks -- white part only 1 hot red chili pepper -- seeded and finely chopped 4 cups vegetable broth 1/3 cup peanut butter salt -- to taste freshly ground pepper -- to taste Garnish choices: minced fresh parsley or minced fresh cilantro or minced scallions or ground peanuts In a soup kettle, saute the onions and garlic in the oil until the onions begin to soften. Add the carrots, celery, potatoes, leeks, hot pepper, and broth, then bring to a boil. Reduce heat and simmer, covered, until the vegetables are tender, about 10 minutes. Add some of the hot broth to the peanut butter to soften it, stir, and then return to the soup. Puree in a food processor and season with salt and pepper. Garnish and serve hot.
