Combine the buttermilk, mayonnaise, garlic, and blue cheese in a blender and blend until smooth. 2. Transfer to a medium bowl and stir in the cottage cheese. Chill, covered, until ready to serve. Makes 1 1/2 cups * Each 2-tablespoon serving contains approximately: Calories: 30; Fat: 1 g; Cholesterol: 4 mg; Sodium: 175 mg; Carbohydrates: 2 g; Protein: 2 g Canyon Ranch Notes: You can use any blue cheese in this recipe or you can substitute goat cheese or aged Cheddar for a totally different flavor range. Blending the blue cheese into the other ingredients in this dressing infuses its flavor throughout the mixture. Stirring the cottage cheese, rather than blending it, provides texture. Also, the lumps of the cottage cheese absorb the flavor and make it seem as if there is more of the higher-fat blue cheese included than there actually is.
