Cheese Brekas

Amount Measure Ingredient -- Preparation Method

1 3/4 Pounds Mozzarella Cheese -- Grated

10 Ounces Feta Cheese -- Crumbled

1 1/2 Pounds Sharp Cheddar Cheese -- Grated

6 Large Eggs -- Beaten

3 Cups Fresh Parsley -- Chopped

2 Cups Scallions -- Chopped

2 Pounds Filo Dough

1 1/2 Cups Butter -- Melted

Sesame Seeds -- Optional

 

1. Combine filling ingredients.

 

2. Lay out three stacked sheets of filo with one of the short sides

nearest to you. Fold the stack lengthwise so that the edges meet.

 

3. Butter the top surface of the filo and spread 1/2-3/4 cup of filling

down the middle, leaving 1-in. margins on the sides.

 

4. Preheat oven to 350.

 

5. Fold the lower corner of the filo up and over diagonally so that the

bottom edge is aligned with the right side. Fold straight up and then to

the left. Continue in this manner, as would a flag, to make a triangular

pastry.

 

6. Lightly butter or oil the baking pans. Lay the triangles in pans.

Brush the top of the triangle with butter, sprinkle with sesame seeds, and

bake at 350 for 20 minutes until puffy and golden.
