Guest guest Posted June 25, 1999 Report Share Posted June 25, 1999 here are two rice dishes from New Recipes From Moosewood Restaurant: * Exported from MasterCook * Arroz Verde Recipe By : New Recipes From Moosewood Restaurant Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 med green bell peppers -- chopped 1/2 cup fresh parsley -- chopped 1 med onion -- chopped 2 cloves garlic 1/2 cup water 2 cups uncooked brown rice 3 tbsp vegetable oil 3 cups water 1 tsp salt Puree the vegetables in a blender with 1/2 cup of water until smooth. Saute the rice in oil for 2-3 minutes, stirring to prevent the rice from scorching. Add the vegetable puree and cook for 5 more minutes, stirring often. Add 3 cups of water and the salt and bring to a boil. reduce the heat, cover, and coo untill the liquid is absorbed, 30-45 mintues. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Lemony Rice Recipe By : New Recipes From Moosewood Restaurant Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups uncooked brown rice 2 tbsp butter 4 1/2 cups water 1 1/2 tsp salt 4 egg yolks 1/3 cup fresh lemon juice 3 tbsp fresh parsley -- chopped 3/4 cup Parmesan cheese -- freshly grated Saute the rice briefly in butter. Add the water and salt, cover, and bring to a boil. Lower the heat and simmer until done, 30-45 minutes. Beat together the egg yolks, lemon juice, parsley, and half of the Parmesan cheese. Pour this mixture over the hot cooked rice, stirring to coat each grain.
