Guest guest Posted June 25, 1999 Report Share Posted June 25, 1999 * Exported from MasterCook * Ziti with Fresh Spinach Recipe By : Vegetarian Homestyle Cooking Serving Size : 4 Preparation Time :0:15 Categories : Vegetarian Homestyle Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces uncooked ziti -- (6 cups cooked) 2 large cloves garlic -- minced 2 teaspoons olive oil 1 1/2 cups vegetable broth 3 cups fresh spinach -- washed & chopped 1 tablespoon flour 2 teaspoons lemon juice 1/2 teaspoon thyme 1/2 teaspoon salt dash pepper Put water on to boil for the ziti and cook separately. In a skillet, saute garlic in the hot oil for a minute. Add broth and spinach. While the spinach is cooking, thicken the broth by sprinkling flour over the mixture and stirring well to avoid clumping. Add remaining ingredients, stirring to thicken.
