Guest guest Posted June 26, 1999 Report Share Posted June 26, 1999 * Exported from MasterCook Mac * Warm Apple Walnut Sauce Recipe By : Moosewood Restaurant Book of Desserts (page 311) Serving Size : 1 Preparation Time :0:00 Categories : Fruit Pies & Pastry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups peeled apples -- thinly sliced 1/4 cup butter 1/4 cup packed brown sugar 1 cup unsweetened apple juice -- or apple cider 1 tablespoon cornstarch 1/2 teaspoon ground cinnamon 1 pinch cloves -- (optional) 1 tablespoon fresh lemon juice -- (optional) 1 cup toasted walnuts -- coarsely chopped 1/4 cup pure maple syrup YIELDS 4 CUPS In the skillet, saute the apples in the butter and brown sugar, stirring constantly on medium heat, for 5 to 10 minutes, until tender. Transfer to a bowl and set aside. Whisk together the apple juice and cornstarch until smooth and dissolved. Add the cinnamon, and the cloves and lemon juice, if using. Pour the juice mixture into the unrinsed skillet and cook for 3 to 5 minutes, stirring to de-glaze the pan, until thick and clear. Pour the thickened sauce over the cooked apples and stir in the walnuts and maple syrup. Serve warm; store refrigerated.
