Cardamom Oatmeal Cookies

3/4 C Apple Butter

2 Tbsp Canola Oil*

1 Egg -- Lightly Beaten

2 Tsp Pure Vanilla Extract

3/4 C Packed Brown Sugar

3/4 C Chopped Raisins -- Optional

1 1/2 C Unbleached White Flour

1 Tsp Baking Soda

1/2 Tsp Salt

1 Tsp Ground Cinnamon

1 Tsp Ground Cardamom

Or

1/2 Tsp Ground Allspice

2 C Rolled Oats

 

* or other vegetable oil

 

Preheat oven to 350 F.

 

Line a baking sheet with parchment paper or prepare it with a light coating

of cooking spray or oil.

In a large bowl, mix together the apple butter, oil, egg, vanilla and brown

sugar until smooth. Stir in the raisins, if using. In a separate bowl mix

together the flour, baking soda, salt, cinnamon and cardamom (or allspice).

Stir in the oats. Add the dry ingredients to the wet ingredients and mix

until well blended.

Drop the batter by the tablespoonful about 3 inches apart onto the baking

sheet. Bake for about 15 minutes, until lightly browned. Transfer to a

wire rack to cool.

Makes 48 2 1/2 inch cookies

NOTES : If you're not crazy about cardamom, reduce the amount in the recipe

to 1/2 teaspoon or substitute 1/2 teaspoon of allspice.

The best way to store low-fat cookies is in layers separated by wax paper or

plastic wrap in an airtight container in the freezer. Defrost at room

temperature for about 20 minutes before serving.
