Guest guest Posted June 27, 1999 Report Share Posted June 27, 1999 * Exported from MasterCook * Mexicali Corn Salad with Smoked Gouda Recipe By : Regina's Vegetarian Table page 28 in the book Serving Size : 1 Preparation Time :0:00 Categories : Salad Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ear corn 2 tablespoons green chiles -- diced, canned 1/3 cup red and green bell peppers -- diced 2/3 cup tomato -- chopped 1/3 cup red onion -- diced 3 ounces smoked gouda cheese dressing 1 tablespoon lemon juice -- fresh 1 tablespoon rice vinegar 2 tablespoons olive oil -- unrefined 1/2 teaspoon chili powder dash cayenne 3/4 teaspoon salt cut corn kernels off the cob. Add vegetables to corn. cut cheese into small cubes (smaller than 1/2 inch) and add to vegetables. in a separate bowl or jar, combine the dressing ingredients. pour dressing over vegetables and toss until all vegetables are well coated.
