Ok -- this is the first recipe I'm mailing from MC5 on my new computer. I need

to make sure everything is working properly.

Spicy Corn Quesadillas

Amount Measure Ingredient -- Preparation Method

2 tablespoons vegetable oil -- divided

1 medium onion -- chopped

2 cloves garlic -- minced

1 medium carrot -- grated

1 fresh chile -- minced

---OR 1/8 tsp cayenne

3 cups fresh corn -- (cut from cob)

---4 to 5 ears

2 teaspoons ground cumin

1 teaspoon ground coriander

1 tablespoon chopped fresh cilantro

salt & pepper to taste

1 1/2 cups grated Monterey Jack or cheddar cheese

8 flour tortillas

 

Heat half the oil in a skillet and add the onion and garlic. Saute on medium

heat about 5 minutes until the onion begins to soften. Stir in the carrot and

saute 2 minutes.

 

Add the chile, corn, cumin, coriander, and cilantro and cook, covered, for 3 to

4 minutes, stirring often. Add salt & pepper to taste and remove from heat.

Stir the cheese into the hot vegetables. Cover and let stand for a few minutes

until the cheese partially melts. Spread 1/8 of the filling on half of each

tortilla.

 

Lightly oil a heavy skillet with 1 tablespoon of the remaining oil. Warm the

skillet on medium heat.

 

Place the quesadillas (as many as will fit) in the skillet ad cook each side for

2 to 3 minutes until the cheese melts and the filling is hot. Add more oil to

the skillet as necessary to cook the remaining quesadillas.
