A friend gave me a sackful of old Vegetarian Times magazines, so I'm slowly formatting the recipes to share with ya'll! ;-) * Exported from MasterCook * Got-the-Blues Muffins Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Breads Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- oil for greasing muffin cups 1/3 cup blue cornmeal 1 1/3 cups whole-wheat pastry flour 1/2 teaspoon salt 1 teaspoon baking soda 4 ounces medium tofu 2/3 cup unsweetened apple juice 1/4 cup vegetable oil 1/4 cup maple syrup 1 cup blueberries Preheat oven to 400 degrees and lightly grease 8 muffin cups. Set aside. Sift together cornmeal, flour, salt, and baking soda. Set aside. In a food processor or blender, blend tofu until smooth. Gradually blend in apple juice. Then add oil and syrup and blend until thoroughly smooth. Pour into a large mixing bowl. Add dry mixture and stir gently, just until a thick batter forms; do not over-mix or muffins will be heavy. Fold in blueberries. Fill prepared muffin cups with batter. Bake for 29 minutes or until tester inserted in center comes out clean. Cool muffins briefly and serve warm. Makes 8 muffins. Helpful Hint: If you use frozen blueberries, add them straight out of the freezer; if they're already thawed, drain off extra liquid before adding to dough. Variation: Instead of making muffins, spread batter in an 8-inch square or 9-inch round baking pan; bake at 400 degrees for 20 minutes, or until bread tests done.
