Hi! A friend gave me a sackful of old Vegetarian Times magazines, so I'm slowly

formatting the recipes to share with ya'll! ;-)

Streusel Coffee Cake

oil for greasing pan

4 tablespoons dry whol-grain bread crumbs -- lightly toasted

1 teaspoon ground cinnamon

2 tablespoons sugar

1/2 cup chopped pecans -- lightly toasted

4 ounces medium tofu

1 cup unsweetened apple juice

1/3 cup vegetable oil

1/3 cup maple syrup

1 teaspoon vanilla extract

2 cups whole-wheat pastry flour -- sifted

1/2 teaspoon baking soda

1/2 teaspoon ground nutmeg

 

Preheat an oven to 350 degrees. Grease an 8-inch square or

9-inch round baking pan and dust with 2 tablespoons bread

crumbs.

 

In a small bowl, combine remaining 2 tablespoons bread crumbs,

1/2 teaspoon cinnamon, sugar and pecans to make streusel. Set

aside.

 

In a food processor or blender, blend tofu, adding apple juice

gradually, until thoroughly smooth. Whisk together oil, syrup and

vanilla in a medium-sized bowl. Add tofu mixture and whisk to

blend.

 

In another bowl, sift together flour, salt, baking soda, nutmeg and

remaining 1/2 teaspoon cinnamon. Add to wet mixture. Stir gently

until a batter forms. Spread half the batter in the prepared pan and

sprinkle with half the streusel mixture; repeat these two layers.

 

Bake immediately for 40 minutes or until tester inserted in center

comes out clean. Serve warm or at room temperature.
