A friend gave me a sackful of old Vegetarian Times magazines, so I'm slowly formatting the recipes to share with ya'll! ;-) * Exported from MasterCook * Ginger Peach Pancakes Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Breakfast Fruit Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup 1% low-fat milk -- or soymilk 1 tablespoon lemon juice 1/2 cup whole wheat pastry flour 1/2 cup rye flour 1/4 teaspoon salt 1 teaspoon baking soda 2 teaspoons ground ginger 1/4 teaspoon ground nutmeg 1/8 teaspoon ground cloves 1 teaspoon grated lemon zest 1 tablespoon vegetable oil 1 tablespoon honey 1 egg -- separated oil for greasing griddle 1 medium peach -- peeled and chopped Combine milk and lemon juice; mixture will curdle and thicken. Sift together wheat and rye flours, salt, baking soda and spices. In a medium-sized bowl, whisk together lemon zest, oil, honey and egg yolk. Whisk in curdled milk. In a separate bowl, beat egg white until stiff but not dry. Heat a griddle until drops of water sizzle. Add dry mixture to wet and stir gently to form a batter; do not overmix. Gently fold in beaten egg white. Lightly grease griddle and pour on batter by the ladelful. When bubbles begin to appear on pancakes, scatter on peach pieces. Cook until golden brown on bottom. Flip pancakes and cook briefly, until lightly browned on underside. Serve immediately or keep warm in low-temperature oven. Makes 1 dozen 4-inch pancakes. Variations: (1) Substitute a pear for the peach. (2) Leave the fruit out of the pancakes and instead serve them with fruit butter, sauce or syrup.
