Guest guest Posted June 29, 1999 Report Share Posted June 29, 1999 * Exported from MasterCook Mac * Strawberry Mango Cobbler Recipe By : Moosewood Restaurant Book of Desserts, page 32 Serving Size : 8 Preparation Time :1:30 Categories : Desserts Fruit Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- - FRUIT LAYER: 2 mango -- * see note 1 1/2 pints fresh strawberries - OR 16-oz frozen strawberries 1/2 cup packed brown sugar 1/2 teaspoon ground cinnamon 1/2 cup ground cardamom 3 tablespoons unbleached white flour -TOPPING: 1 cup unbleached white flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 cup sugar 1 large egg 1/2 teaspoon pure vanilla extract 1/4 cup melted butter 1/3 cup buttermilk * When combined, the prepared mango and strawberries should equal about 6 cups. Preheat oven to 375 degrees. Peel the mango and cut them into bite-sized pieces. Cut the strawberries into halves or quarters, depending on their size. In a bowl, gently mix the fruit with the brown sugar, cinnamon, cardamom, and flour. Place the mixture in the baking pan and set aside. Sift together the flour, baking powder, baking soda, and sugar. In a separate bowl, lightly beat the egg and combine it with the vanilla, melted butter, and buttermilk. Make a depression in the dry ingredients and add the buttermilk mixture all at once. Stir just until combined; the dough will be slightly stiff. Drop the batter by large spoonfuls into 6 slightly flattened mounds that are evenly spaced over the fruit. Bake for 30 to 40 minutes, until the fruit is bubbling and the dough is golden brown and firm to the touch. Cool for at least 20 minutes before serving warm or at room temperature.
