Strawberry Mango Cobbler

- FRUIT LAYER:

2 mango -- * see note

1 1/2 pints fresh strawberries

- OR 16-oz frozen strawberries

1/2 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/2 cup ground cardamom

3 tablespoons unbleached white flour

-TOPPING:

1 cup unbleached white flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 cup sugar

1 large egg

1/2 teaspoon pure vanilla extract

1/4 cup melted butter

1/3 cup buttermilk

 

* When combined, the prepared mango and strawberries should equal about 6 cups.

 

Preheat oven to 375 degrees. Peel the mango and cut them into

bite-sized pieces. Cut the strawberries into halves or quarters,

depending on their size. In a bowl, gently mix the fruit with the

brown sugar, cinnamon, cardamom, and flour. Place the mixture in the

baking pan and set aside.

 

Sift together the flour, baking powder, baking soda, and sugar. In a

separate bowl, lightly beat the egg and combine it with the vanilla,

melted butter, and buttermilk. Make a depression in the dry

ingredients and add the buttermilk mixture all at once. Stir just

until combined; the dough will be slightly stiff. Drop the batter by

large spoonfuls into 6 slightly flattened mounds that are evenly

spaced over the fruit.

 

Bake for 30 to 40 minutes, until the fruit is bubbling and the dough

is golden brown and firm to the touch. Cool for at least 20 minutes

before serving warm or at room temperature.

Baking Time: 30 to 40 minutes

 

Cooling Time: 20 minutes

NOTES : This delightful, rosy-hued cobbler is packed with mango and

strawberries and topped with golden brown, flaky biscuits. The

baking time and the amount of sugar necessary will vary depending

upon the ripeness of the mango.
