Guest guest Posted June 29, 1999 Report Share Posted June 29, 1999 * Exported from MasterCook * Eggplant Provençale Recipe By : New Recipes from Moosewood Restaurant, page 94 Serving Size : 6 Preparation Time :0:00 Categories : Main Dish Moosewood Vegan Vegetarian Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups uncooked brown rice 1 tablespoon olive oil generous pinch of saffron 3 cups water 1 1/2 teaspoons salt 2 tablespoons olive oil 3 medium eggplants 1/4 cup water 1/4 cup sherry 2 tablespoons olive oil 3 cups minced onions 1 large red or green pepper -- minced 1 tablespoon sherry 1/2 teaspoon cayenne (optional) 2 medium tomatoes -- chopped 1/2 cup dried currants 1/2 cup fresh parsley -- chopped 1/4 teaspoon black pepper 1/2 cup tomato juice or water 1/2 cup almonds -- toasted, slivered fresh parsley -- chopped Cook the rice, sautéing it in olive oil and crumbling the saffron into the pan before adding the water and salt. Brush a large baking pan with olive oil. Leaving the stems on, slice the eggplants in half lengthwise and place them in the pan, cut side down. Add 1/4 cup water and 1/4 cup sherry. Cover tightly with aluminium foil and bake at 375° until tender, about 45 minutes. Meanwhile, sauté the onions in 2 tablespoons olive oil for 10 minutes. Add the peppers, 1 tablespoon sherry, and the cayenne. Sauté covered for 5 minutes. Stir in the tomatoes, currants, parsley, and pepper. simmer covered a few minutes, until the vegetables begin to release their juices. Combine the rice and the vegetable mixture. When the baked eggplants are cool enough to handle, turn them over in the baking pan and gently mash and push to the side the soft middle. Mound the rice pilaf on each eggplant half. Pour 1/2 cup of tomato juice or water into the baking pan. cover the pan tightly and return it to the oven to bake about 30 minutes.
