Guest guest Posted June 29, 1999 Report Share Posted June 29, 1999 * Exported from MasterCook * Spicy Szechuan Noodles Recipe By : New Recipes from Moosewood Restaurant, page 45 Serving Size : 4 Preparation Time :0:00 Categories : Asian Moosewood Pasta Salad Vegan Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound whole wheat spaghetti or soba noodles 1/4 cup peanut butter (or part tahini) 1/4 cup warm water 3 tablespoons tamari soy sauce 2 tablespoons wine vinegar (preferably rice) 1 tablespoon dark sesame oil 1 teaspoon hot chili oil 2 cups fresh mung bean sprouts 1 cucumber, peeled cut lengthwise, seeded -- in crescent slices chopped scallions toasted sesame seeds Cook the pasta al dente in salted water. Drain it and rinse with cold water. Mix the peanut butter, warm water, soy sauce, vinegar, and oils. Toss the noodles with the bean sprouts, cucumbers, and sauce. Top with chopped scallions and/or toasted sesame seeds, if desired. this dish is most flavorful served at room temperature.
