Baked Peaches

Amount Measure Ingredient -- Preparation Method

4 large or 8 small ripe peaches -- pitted and sliced

1/4 cup toasted wheat germ

2 tablespoons brown sugar

1/4 teaspoon Dessert Spice Blend

(See separate recipe)

OR ground cinnamon

 

Preheat the oven to 400F

 

Arrange the sliced peaches in a baking dish. Mix the wheat germ, sugar and

spice blend together in a small bowl and sprinkle over the peaches. Cover

with foil or lid. Bake, 10 to 15 minutes or until peaches are hot. Serve

warm or at room temperature.

 

Variation: This simple dessert works with just about any ripe fruit or

combination of fruits: pears, apples, pineapple or mangoes.

 

Yield: 4 servings, calories: 116, fat: 1g, fiber: 4g.

Banana " Rice " Pudding

Amount Measure Ingredient -- Preparation Method

4 ripe bananas -- sliced

2 cups cooked oat groats or brown rice

OR other whole grain of your choice

1/4 cup dry sherry or rum

1/4 cup packed brown sugar

1/2 teaspoon Dessert Spice Blend

(see separate recipe)

 

Combine all ingredients in a microwave-safe dish and microwave on HIGH 4 to

5 minutes or until the bananas are soft and the grain is heated through.

Mixture can also be cooked, stirring occasionally, in a saucepan over

medium heat until hot. Serve warm or at room temperature.

 

Variations: Add raisins, currants, chopped dried apricots or other fruits,

or tiny pieces of candied ginger, if desired. Substitute your favorite

flavored liqueur for the rum. Garnish with fresh fruits or sprinkle with a

little Dessert Spice Blend. Leftovers are good for breakfast!

 

Yield: 6 to 8 servings, calories: 158, fat: 1g, fiber: 3g.
