I've fooled many friends with it. * Exported from MasterCook * Eggless Salad Recipe By :Karen C. Greenlee Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound firm light tofu -- drained 6 tablespoons light or nonfat mayonnaise 1/4 cup finely chopped red pepper 1 large carrot -- finely shredded 3 green onions -- finely chopped 1/2 cup finely chopped celery -- (optional) 2 tablespoons chopped fresh parsley 2 tablespoons relish 2 teaspoons yellow mustard 1 teaspoon Mrs. Dash Garlic & Herb Seasoning 1/2 teaspoon salt -- (or to taste) 1/4 teaspoon freshly ground black pepper In a medium bowl, mash tofu with a fork. Add remaining ingredients and mix well.
