4 cups blueberries

1/2 cup sugar

2 tablespoons cornstarch

2 tablespoons lemon juice

1/2 cup rolled oats

1/2 cup flour

1/4 cup brown sugar

2 tablespoons toasted chopped walnuts

6 tablespoons light margarine or butter

 

For variety, try other berries-or a mixture.

 

1. Preheat oven to 375 F. Coat a 1-qt casserole with nonstick spray. In

a large bowl, mix blueberries, sugar, cornstarch, and lemon juice. Spoon

into the casserole. In the same bowl, mix oats, flour, brown sugar, and

walnuts. With a pastry blender, cut in the margarine or butter until the

mixture resembles cornmeal. Sprinkle over the berry mixture.

 

2. Bake for 45 mm. or until the crisp is lightly browned and bubbling.

Serves 8

Fiber 2.2 g, Pro 2.3 g, Carb 40.2 g, Sodium 45mg. Also a very good source

1 tablespoon canola oil

1/2 teaspoon dark sesame oil

114 cups sherry

4 cups bite-size broccoli florets

1 large carrot -- peeled

and sliced diagonally

2 thin slices fresh gingerroot

1 lb can baby corn -- drained

Salt to taste

 

In large skillet or stir-fry pan, heat oils and sheny over medium-high

heat. Add broccoli, carrot and ginger and stir-fry until broccoli is

crisp-tender, about 3 minutes. Add baby corn and stir-fry until heated

through, about 1 minute. Discard ginger slices. Season with salt and

serve. Makes 6 servings.

1/4 cup dry sherry

1 teaspoon Olive oil

1 tablespoon minced fresh garlic

1/4 cup minced shallots

4 oil-packed sun-dried tomatoes

drained and coarsely chopped

2 tablespoons finely chopped pickled whole jalapeno

peppers

2 large ripe tomatoes

seeded and coarsely chopped

(or 1-1/2 cups chopped canned plum

tomatoes)

1/2 pound fresh pasta of choice

2 tablespoons chopped fresh basil

2 tablespoons chopped fresh parsley

 

Makes 2 servings

 

1. Heat sherry and oil to bubbling in a heavy skillet over medium-high

heat. Add garlic and shallots and saute for 3 min., stirring.

 

2. Add sun-dried tomatoes, jalapenos and regular tomatoes. Reduce heat to

low. Cook, stirring occasionally, for 20 min.

 

3. While sauce simmers, bring a large pot of water to a boil and cook

pasta 3-5 min. or until tender. Stir often to prevent sticking.

 

4. Drain pasta well. Rinse briefly with hot water to remove excess

starch, and drain again.

 

5. Add pasta to sauce in skillet, sprinkle with basil and parsley. Toss

well with sauce and serve immediately.

 

Helpful Hints:

 

Select a fresh pasta that contains no egg yolks; otherwise, you will add

cholesterol to the dish.

 

For added color and taste, use fresh pastas made with spinach, artichoke,

beet and other flavors.

 

To reduce spiciness, remove seeds and inner ridges from jalapenos before

chopping. To tame further, use less jalapeno.
