Guest guest Posted July 9, 1999 Report Share Posted July 9, 1999 * Exported from MasterCook * Jamaican Jerk Vegetables Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : The Global Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***FOR THE VEGETABLES*** 1 medium zucchini -- chopped coarse 8 cherry tomatoes -- halved 1 medium green pepper -- seeded and chopped -- coarse 8 medium button mushrooms -- up to 10 8 broccoli florets -- up to 10 ***FOR THE MARINADE*** 6 scallions -- chopped, up to 8 1 medium yellow onion -- diced 1/2 Scotch bonnet or jalapeno peppers -- seeded and minced, -- up to 2 3/4 cup light soy sauce 1/2 cup red wine vinegar 1/4 cup canola oil 1/4 cup brown sugar -- packed 1 1/2 tablespoons fresh thyme -- ( 1/2 tsp dried) 1/2 teaspoon ground cloves 1/2 teaspoon nutmeg 1/2 teaspoon allspice or cinnamon Thread the vegetables onto 4 barbecue skewers, alternating zucchini, cherry tomato, green pepper. mushroom, and broccoli. Place the skewers in a casserole dish. In a food processor fitted with a steel blade, add the marinade ingredients. Process for 10 to 15 seconds at high speed. Pour the marinade over the skewered vegetables and refrigerate for 2 to 4 hours. Preheat the grill until the coals are gray to white. Remove the skewers from the marinade and drain off any excess liquid. Place on the oiled grill and cook for 4 to 5 minutes on each side, or until the vegetables are tender (not burnt!).
