Guest guest Posted July 10, 1999 Report Share Posted July 10, 1999 * Exported from MasterCook * Hawaiian Papaya Guacamole Recipe By : Global Vegetarian, by Jay Solomon, page 66 Serving Size : 4 Preparation Time :0:00 Categories : Appetizers Global Vegetarian Vegan Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium ripe avocados, peeled, halved -- chopped 1 medium papaya, peeled, halved seeded -- chopped 1 large tomato -- diced 1/4 cup red onion -- finely chopped 2 cloves garlic -- minced 2 tablespoons cilantro -- minced Juice of 1 lime 1/2 teaspoon ground cumin 1/2 teaspoon salt 1/2 teaspoon black pepper 2 scallions -- chopped Place all of the ingredients (except the scallions) in a food processor fitted with a steel blade and process for about 10 seconds. (Or, mash the ingredients by hand in a mixing bowl, forming a chunky paste.) Transfer to a serving bowl and top with the scallions.
