Javanese Noodles with Peanut Sauce

Amount Measure Ingredient -- Preparation Method

1/2 pound rice sticks (or rice vermicelli)

1 tablespoon peanut oil or canola oil

1 medium red bell pepper -- seeded and chopped f

1 serrano or other hot chili pepper -- seeded and minced

2 cloves garlic -- minced

1 tablespoon gingerroot -- minced

6 tablespoons chunky peanut butter

1/4 cup hot water

3 tablespoons ketjap manis ( or 3 tablespoons light soy

sauce sweetened with 1 tablespoon

brown sugar)

2 tablespoons lime juice

1 teaspoon (1 to 2) sesame oil

5 (5 to 6) scallions -- chopped

2 tablespoons cilantro * -- minced

8 (8 to 10) broccoli florets (optional) -- blanched

 

In a medium saucepan, place the rice sticks in boiling water and cook for 3 to 5

minutes, until al dente. Drain and set aside.

 

In a saucepan, heat the oil. Add the peppers, garlic, and gingerroot. Whisk in

the peanut butter, water, ketjap manis, lime juice, and sesame oil. Bring the

sauce to a simmer, stirring frequently. Remove from the heat and add the

scallions and cilantro.

 

Place the noodles on serving plates and spoon the peanut sauce over the top.

Garnish with the broccoli florets, if desired.

 

* Peppery arugula or Thai basil can be added in place of cilantro.

NOTES : This recipe comes from Java, an Indonesian island known for dishes with

peanut sauces. One key ingredient here is ketjap manis, a sweetened version of

soy sauce. Rice sticks are thin, vermicellilike noodles that cook up quickly.

This dish also tastes good cold, so make extra for tomorrow's lunch.
