Guest guest Posted July 9, 1999 Report Share Posted July 9, 1999 * Exported from MasterCook * Couscous Tropicale w/Black Beans & Corn Recipe By :The Global Vegetarian, Jay Solomon Serving Size : 6 Preparation Time :0:00 Categories : The Global Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup couscous 1 1/2 cups boiling water 2 medium tomatoes -- diced 1 medium red or green bell pepper -- seeded & diced 4 scallions -- chopped 1 15 oz can black beans -- drained & rinsed 2 cups corn kernels 2 tablespoons minced fresh cilantro 1/2 teaspoon salt 1/2 teaspoon black pepper juice of 1 lime -- (preferably Key Lime In a medium bowl, combine the couscous and boiling water, cover, and let stand for 10 minutes. In a large mixing bowl, combine the couscous with the remaining ingredients and toss together thoroughly.
