Recipe By : Global Vegetarian, by Jay Solomon, page 130 Serving Size : 1 Preparation Time :0:00 Categories : Appetizers Global Vegetarian Mexican Salsa Vegan Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium tomatoes -- diced 1 medium green bell pepper -- seeded and diced 1 medium yellow onion -- diced 2 cloves garlic -- minced 1 (1 to 3) jalapeno peppers -- seeded and minced 2 tablespoons cilantro -- chopped 2 teaspoons fresh lime juice 1 teaspoon ground cumin 1 teaspoon dried oregano 1/4 teaspoon black pepper 1/4 teaspoon salt 1/4 teaspoon cayenne pepper 1 16-ounce can crushed tomatoes In a large bowl, combine all of the ingredients (except the crushed tomatoes) and mix well. In a food processor fitted with a steel blade, place three-quarters of the mixture and process for 5 to 10 seconds, creating a vegetable mash (not too soupy!). Return the mash to the bowl and add the crushed tomatoes; blend well. Cover the salsa with plastic wrap and chill for at least 1 hour, allowing the flavors to meld together. - - - - - - - - - - - - - - - - - - NOTES : This is the quintessential tomato salsa; chunky, spicy, complex, radiant with cilantro, lime and cumin, and, of course, spiked with jalapeno peppers.
