Guest guest Posted July 12, 1999 Report Share Posted July 12, 1999 * Exported from MasterCook * " Chorizo " Recipe By :1,001 Low Fat Vegetarian Recipes Serving Size : 6 Preparation Time :0:00 Categories : 1,001 Low Fat Veg Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 teaspoon coriander seeds (to 1 tsp) -- crushed 1/2 teaspoon cumin seeds (to 1 tsp) -- crushed 1 dried ancho chile -- (to 2) 1 12 oz pkg prebrowned vegetable protein crumbles 2 eggs 2 tablespoons cider vinegar 2 cloves garlic 2 tablespoons paprika 1 teaspoon dried oregano leaves -- (to 1 1/2 tsp) 1/2 teaspoon salt vegetable cooking spray 1 cup Red Tomato Salsa -- (pg 9) 6 tablespoons fat free sour cream 1. Heat seeds in small skillet over medium heat until toasted, stirring frequently Remove from skillet. Add chili to skillet; cook over medium heat until softened, turning frequently so chili doesn't burn, 1 to 2 minutes. Remove and discard stem, veins, and seeds. Chop chili finely. 2. Combine vegetable protein crumbles, seeds, chili, eggs, vinegar, garlic, paprika, oregano, and salt. Form mixture into 6 patties. 3. Spray large skillet with cooking spray; heat over medium heat until hot. Cook patties over medium to medium-low heat until browned, 3 to 4 minutes on each side.
