Japanese Sesame Spinach

Amount Measure Ingredient -- Preparation Method

3 pounds fresh spinach -- stems removed

OR 2 10-ounce bags cleaned spinach leaves

Salt

2 tablespoons soy sauce

4 teapsoons mirin (Japanese sweet rice wine)

2 teaspoons vegetable oil

2 teaspoons sugar

2 tablespoons sesame seeds -- toasted

 

Add spinach to a saucepan of boiling salted water and boil uncovered over high

heat for 2 minutes or until just tender. Drain in a colander, rinse with cold

water, and drain well. Gently squeeze dry by handfuls. Separate the squeezed

balls of spinach and spread on a serving plate in a fairly thin layer.

 

In a small bowl, whisk soy sauce, mirin, vegetable oil, and sugar. Pour over

spinach. Just before serving, sprinkle with sesame seeds. Serve at room

temperature.
