Guest guest Posted July 13, 1999 Report Share Posted July 13, 1999 * Exported from MasterCook * Japanese Sesame Spinach Recipe By : Faye Levy's International Vegetable Cookbook, page 200 Serving Size : 4 Preparation Time :0:00 Categories : Japanese Side Dishes Vegan Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds fresh spinach -- stems removed OR 2 10-ounce bags cleaned spinach leaves Salt 2 tablespoons soy sauce 4 teapsoons mirin (Japanese sweet rice wine) 2 teaspoons vegetable oil 2 teaspoons sugar 2 tablespoons sesame seeds -- toasted Add spinach to a saucepan of boiling salted water and boil uncovered over high heat for 2 minutes or until just tender. Drain in a colander, rinse with cold water, and drain well. Gently squeeze dry by handfuls. Separate the squeezed balls of spinach and spread on a serving plate in a fairly thin layer. In a small bowl, whisk soy sauce, mirin, vegetable oil, and sugar. Pour over spinach. Just before serving, sprinkle with sesame seeds.
