1/4 cup vegetable broth

2 tablespoons miso

2 tablespoons sugar

Sliced green onions for garnish

 

MAKES 3/4 CUP DAIRY-FREE

 

Our version of sushi dipping sauce is on the mild side. For an extra kick,

add 1/4 to 1 teaspoon powdered wasabi (green-colored Japanese horseradish)

to the sauce.

 

In small bowl, mix all ingredients except green onion. Cover and chill

until ready to use. Garnish with green onions just before serving.

Spicy Ginger Sauce (For Noodles)

1 1/2 tb Low-sodium soy sauce

1 tb Oriental sesame oil

2 ts Minced peeled fresh ginger

2 Garlic cloves -- minced

1 t Sugar

1/2 ts Chili oil -- -OR-

1/4 ts -Dried crushed red pepper

2 Green onions -- thinly sliced

1 Carrot -- peeled, shredded

1/2 Cucumber

-- peeled, seeded, chopped

1/4 c Chopped fresh cilantro

 

[Asian accents make this a perfect partner for Japanese noodles, such as

udon (use about 12 ounces, dry weight). Serve the finished pasta well

chilled.]

 

Whisk all ingredients to blend in large bowl. Refrigerate.

Place all ingredients in food processor, mix well and strain.
