Guest guest Posted July 14, 1999 Report Share Posted July 14, 1999 * Exported from MasterCook * Stuffed zucchini Recipe By :Cooking Light.com 7/2/99 Serving Size : 8 Preparation Time :0:00 Categories : Lowfat Side Dish Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium zucchini -- cut in half lengthwise 1/2 cup chopped onion 2 tsp minced garlic 1 cup tomato -- chopped and seeded 1/2 cup seasoned breadcrumbs 1/4 cup Parmesan Cheese -- grated Scoop out pulp from zucchini, and coarsely chop. Saute pulp, chopped onion, and minced garlic until tender. Add seeded tomato; cook 3 minutes. Stir in seasoned breadcrumbs. Stuff shells; sprinkle with Parmesan cheese. Cut each half into 3 pieces; bake at 350 for 15 minutes.
