Stuffed zucchini

Amount Measure Ingredient -- Preparation Method

4 medium zucchini -- cut in half

lengthwise

1/2 cup chopped onion

2 tsp minced garlic

1 cup tomato -- chopped and seeded

1/2 cup seasoned breadcrumbs

1/4 cup Parmesan Cheese -- grated

 

Scoop out pulp from zucchini, and coarsely chop. Saute pulp, chopped onion, and

minced garlic until tender. Add seeded tomato; cook 3 minutes. Stir in seasoned

breadcrumbs. Stuff shells; sprinkle with Parmesan cheese. Cut each half into 3

pieces; bake at 350 for 15 minutes.
