Guest guest Posted July 14, 1999 Report Share Posted July 14, 1999 This can be made vegan by using an eggless mayonnaise such as " Nayonnaise " . * Exported from MasterCook * Mock Chicken Salad Sandwiches Recipe By :1,001 Low Fat Vegetarian Recipes Serving Size : 4 Preparation Time :0:00 Categories : 1,001 Low Fat Veg Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 8 oz pkg tempeh 1/3 cup chopped onion 1/3 cup chopped celery 1/3 cup chopped green bell pepper 2 tablespoons sliced green or black olives -- up to 4 tbsp 1/3 cup fat-free mayonnaise -- up to 1/2 cup 1 teaspoon Dijon mustard -- up to 2 tsp 1 teaspoon lemon juice -- up to 2 tsp Salt and pepper -- to taste 8 slices whole wheat or light rye bread -- toasted lettuce leaves -- as garnish 1 medium tomato -- sliced 1. Crumble tempeh, or mash coarsely with a fork. Combine tempeh, onion, celery bell pepper, and olives in a bowl. In another bowl, mix mayonnaise, mustard, and lemon juice; stir into tempeh mixture.
