AFAIK freezing doesn't help, nor does it matter much whether the bag is opened. I would advise buying a brand and size that turns over quickly in the grocery store-- like Gold Medal. If you won't be using the whole bag up in six weeks, try the flour in your grocery store's blk section. Then you can just get as much as you'll need.
