Lentil Pitas with Feta Cream

Amount Measure Ingredient -- Preparation Method

1 cup dry lentils -- cooked

1/2 cup finely chopped seeded tomato

1/2 cup finely chopped zucchini or yellow squash

1/4 cup finely chopped green onions and tops

3 cloves garlic -- minced

1/4 cup unseasoned dry breadcrumbs

1/2 teaspoon ground cumin -- (to 3/4 tsp)

salt & pepper to taste

1 egg white

olive oil cooking spray

2 large pita breads -- cut into halves

1/2 small cucumber -- thinly sliced

FETA CREAM:

1/2 cup fat free yogurt

1/4 cup crumbled reduced fat feta cheese

3 tablespoons finely chopped cilantro

1/2 teaspoon dried dilled weed

1/8 teaspoon ground white pepper

 

Process lentils in food processor or mash with a fork until finely chopped but

not smooth (some whole lentils should still be visible). Mix in tomato,

zucchini, green onions, garlic, breadcrumbs, and cumin; season to taste with

salt & pepper. Mix in egg white; shape mixture into 4 patties.

 

Spray a large skillet with cooking spray; heat over medium heat until hot. Cook

patties until browned on the bottoms, about 5 minutes. Spray tops of patties

with cooking spray and turn; cook over medium heat until browned on other side,

about 5 minutes.

 

Place patties in pita breads; top with cucumber slices and spoon Feta Cream

over.

 

Feta Cream: Mix all ingredients together and refrigerate until serving time.
