Peter:

There is a vegetarian oyster sauce available. It might be a little hard to

find. I looked high & low (and I live in Atlanta with a very large Asian

community & all kinds of

stores). I finally found mine at the Dekalb Farmer's Market (for those of you

who are in Atlanta). It's really more of an " international market " . The brand

I have is " vegetarian

mushroom oyster sauce " . The brand name is Wan Ja Shan and is from Taiwan. The

ingredients are " soybeans, wheat, salt, sugar, starch, water, mushroom flavor,

and Butyl

P-Hydroxybenzoate " .

If you can't find vegetarian oyster sauce, just try substituting soy sauce.

Actually, the oyster sauce I have is rather like thick & saltier soy sauce.

I've never seen a vegetarian " fish sauce " , but I suppose it could exist.

Any recipe I've seen calling for it, I just substitute the veg oyster sauce.

Good luck!
