Guest guest Posted July 17, 1999 Report Share Posted July 17, 1999 * Exported from MasterCook * Use-It-Up Pie Recipe By :1,001 Low Fat Vegetarian Recipes Serving Size : 6 Preparation Time :0:00 Categories : 1,001 Low Fat Veg Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Vegetable cooking spray 1 cup sliced mushrooms 1/2 cup chopped onion 1/2 cup green bell pepper 1/2 cup sliced zucchini 1/2 cup broccoli florets 1 teaspoon minced garlic 1 teaspoon dried basil leaves 1 teaspoon dried oregano leaves 1/4 teaspoon crushed red pepper -- up to 1/2 tsp 1 cup coarsely chopped tomato 1/2 cup kidney or black beans -- rinsed & drained 1/2 cup shredded reduced-fat Cheddar cheese -- (2 ounces) Salt and pepper -- to taste 1 1/4 cups reduced-fat baking mix 2 tablespoons grated fat-free Parmesan cheese 2 eggs 1 cup skim milk 1. Spray large skillet with cooking spray; heat over medium heat until hot. Saute mushrooms, onion, bell pepper, zucchini, broccoli, and garlic until tender, 5 to 8 minutes. Stir in basil, oregano, and red pepper; cook 1 to 2 minutes longer 2. Remove skillet from heat and stir in tomato, beans, and Cheddar cheese; season to taste with salt and pepper Spoon mixture into bottom of lightly greased 9-inch pie pan. 3. Mix baking mix, Parmesan cheese, eggs, and milk until smooth; spread mixture evenly over vegetables in pan. Bake at 400 degrees until set and browned on top, 25 to 30 minutes.
