Deviled Tomatoes

6 ripe plum tomatoes

2 slices whole grain bread

--torn into several pieces

2 teaspoons canola oil or soy margarine

2 pinches to 3 pinches of several dried herbs:

--dried dill, basil, summer savory, etc.

 

Preheat oven broiler in oven or toaster oven.

 

Cut the tomatoes in half and arrange on a baking dish.

 

In a food processor fitted with a steel blade, combine the bread, oil or

margarine, and dried herbs. Process to get even coarse crumbs.

 

Sprinkle the crumbs over the tomatoes. Broil for 3 to 5 minutes, depending on

the strength of your broiler, or until crumbs are golden brown. Watch carefully

so they don't burn.

Fettuccine in Green Chile Corn Sauce

1/2 pound fettuccine

--spinach, regular, or combination

16 ounces frozen corn kernels -- thawed

2 cups low fat cottage cheese

1/4 cup fresh parsley or cilantro leaves

2 scallions -- chopped

1 tablespoon extra virgin olive oil

1 small red bell pepper -- cut into thin strips

1 4 oz can chopped green chiles

salt & freshly ground pepper

 

Begin cooking the fettuccine. Just before draining, add the corn kernels to

heat them.

 

In a food processor or blender, combine the cottage cheese, parsley or cilantro

leaves, scallions, and olive oil. Process until smoothly pureed.

 

When the fettuccine-corn mixture is done, drain it well and combine it with the

cottage cheese mixture, bell pepper, and green chiles in a large bowl. Season

to taste with salt & pepper.
