Guest guest Posted July 20, 1999 Report Share Posted July 20, 1999 * Exported from MasterCook * Greek Spinach-Feta Wrap Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 10 oz. pkg. frozen spinach, cooked, cooled, and -- drained 1 tablespoon olive oil 1 bunch green onions, -- finely sliced 1 clove garlic -- minced 1/4 cup fresh dill, chopped -- do not pack 2 rectangles soft lavash bread 1/2 7 oz. jar roasted red peppers -- cut into strips 10 small kalamata olives, pitted & halved 1/2 cup feta cheese -- crumbled Squeeze excess moisture from spinach with hands. Heat oil in saute pan. Add green onions and garlic; saute until the onions wilt and begin to turn brown around the edges. Add spinach and dill; stir to combine. Spread half the spinach onto a sheet of lavash in a 10x9 " rectangle. Top with half the pepper strips and half the olive halves. Sprinkle evenly with half the feta cheese. Trim sides of lavash to within 2 inches of the spinach. Roll up jellyroll-style and slice on the diagonal down the middle.
