Guest guest Posted July 20, 1999 Report Share Posted July 20, 1999 * Exported from MasterCook * Quick Pasta and Bean Soup Recipe By : Vegetarian Express, Nava Atlas Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Express Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup uncooked ditalini (tiny tube shaped pasta) 1 tablespoon olive oil 1 small zucchini --cut into 1/2 " or smaller dice 2 cloves garlic -- minced 2 16 oz cans cannellini beans, cooked 1 14 oz can crushed or pureed tomatoes 2 teaspoons salt free herb & spice seasoning mix 1 teaspoon paprika 1/2 teaspoon Italian seasoning -- (or more to taste) 2 tablespoons finely chopped fresh parsley salt & freshly ground pepper to taste Bring water to a boil in a medium-sized saucepan. Cook the ditalini until al dente, then drain. In the meantime, heat the oil in a soup pot. Add the zucchini and garlic and cook over moderate heat, covered, about 2 minutes. Add the remaining ingredients except the parsley, along with 3 cups of water. Turn the heat up and bring the soup to a simmer, then turn the heat back to moderate and simmer the soup gently but steadily for 10 minutes, covered. When the pasta is done, drain it and add it to the soup along with the parsley. Adjust the consistency with more water if the soup is too dense. Season to taste with salt & pepper. Assoc. : 4363 0 0 0 0 0 0 5305 0 0 0 0 0 * Exported from MasterCook * Vegetable Hero Recipe By : Vegetarian Express, Nava Atlas Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Express Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 medium onion --quartered & thinly sliced 1 medium green or red bell pepper -- cut into 2 " strips 1/2 pound white mushrooms -- thickly sliced 1/3 cup mayonnaise or Nayonnaise 1 teaspoon dried dill salt & freshly ground pepper to taste 1 large loaf Italian bread Heat the olive oil in a large skillet. Add the onion, and over it layer the bell pepper, and over that the mushrooms. Cover the skillet tightly and cook the vegetables over moderate heat for 5 minutes, then remove from heat. Uncover and stir the vegetables. Add the mayonnaise or Nayonnaise and dill. Season to taste with salt & pepper, then stir again. Split the Italian bread in half horizontally, spread the flat bottom half with the filling, the cover with the top half. Cut into 6 equal segments and serve. - - - - - - - - - - - - - - - - - - Nutr.
