Pisto de Vegetables

1/2 cup chopped onion

1 garlic clove -- minced

2 tablespoons olive oil

1 green pepper -- cut into 1-inch pieces

1 zucchini -- sliced

1 small potato -- thinly sliced

1 8-ounce can tomatoes

 

In fry pan, sauté onion and garlic in olive oil until onion is soft; add green

pepper, zucchini, and thinly sliced potato. Cook and stir for a few minutes. Add

tomatoes. Cover and simmer for 10 minutes. Serve at room temperature.
