Guest guest Posted July 21, 1999 Report Share Posted July 21, 1999 * Exported from MasterCook * Arroz Verde (Green Rice) Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Rice Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small white onion -- peeled & quartered 2 poblano peppers, seeded, deveined -- & quartered 3 cloves garlic 1 cup fresh cilantro 2 cups vegetable or imitation chicken broth salt & pepper 1 cup long grain white rice 2 tablespoons vegetable oil Place onion, chiles, garlic, cilantro, and 1 cup of broth in a blender. Blend, strain, and season with salt and pepper. Heat oil in a heavy pot over medium-low heat. Add rice and saute, stirring constantly, for 2 minutes. Add sauce and remaining 1 cup of broth. Cover and simmer for 20 minutes.
