Arroz Verde (Green Rice)

Amount Measure Ingredient -- Preparation Method

1 small white onion -- peeled & quartered

2 poblano peppers, seeded, deveined -- & quartered

3 cloves garlic

1 cup fresh cilantro

2 cups vegetable or imitation chicken broth

salt & pepper

1 cup long grain white rice

2 tablespoons vegetable oil

 

Place onion, chiles, garlic, cilantro, and 1 cup of broth in a blender.

Blend, strain, and season with salt and pepper.

Heat oil in a heavy pot over medium-low heat. Add rice and saute, stirring

constantly, for 2 minutes. Add sauce and remaining 1 cup of broth. Cover and

simmer for 20 minutes. Remove pot from heat, but keep covered, allowing rice to

cook for another 10 minutes.
