Guest guest Posted July 21, 1999 Report Share Posted July 21, 1999 Rudy, What I do with zucchini is to saute some chopped onion and minced garlic to taste (I like lots) in some olive oil. Then take some sliced zucchini and tomatoes (fresh is really good) and add that in with oregano to taste. Cook until zucchini is tender. This is good as a side or over pasta.
