I can't believe it either, but it looks like it's true, 769

calories!!!!!!!!!

Vegetable-and-Cheese Strata

Amount Measure Ingredient -- Preparation Method

1 teaspoon oil

2 cups diced zucchini

2 cups sliced mushrooms

1 cup diced red bell pepper

1 cup diced onion

2 cloves garlic -- crushed

3/4 cup canned artichoke hearts -- drained and chopped

8 cups Italian bread -- cubed

cooking spray

1 cup reduced fat extra sharp cheddar cheese -- shredded

1/4 cup fresh Parmesan cheese -- grated

1 1/2 cups egg substitute

1 teaspoon dried Italian seasoning

1/2 teaspoon dry mustard

1/4 teaspoon salt

1/4 teaspoon pepper

12 ounces evaporated skim milk

oregano sprigs -- optional

 

Heat oil in a nonstick skillet over medium high heat. Add zucchini,

mushrooms, bell pepper, onion, and garlic, and saute vegetable mixture 6

minutes or until tender. Remove from heat and stir in artichokes, and set

aside.

 

Arrange Italian bread cubes in a 13 x 9 inch baking dish coated with cooking

spray. Spoon zucchini mixture evenly over bread cubes, and sprinkle mixture

with cheeses.

 

Combine egg substitute and remaining ingredients (except oregano sprigs) in

a large bowl; stir with a whisk. Pour egg mixture over zucchini mixture.

Cover mixture with foil; chill in refrigerator 8 hours.

 

Remove from refrigerator, and let stand at room temperature 30 minutes.

Bake, covered, at 325° for 1 hour or until bubbly. Garnish, if desired.

Makes 8 servings.

Maybe someone has this magazine with the nutritional information. I'm on

vacation and mine is at home. I made this recipe for company a few weeks

ago and it came to less than 300 calories--6 or 7 ww points. I think the

problem is in the calories Mastercook gives to the bread. I used most of a

1 pound loaf of bread. If I change the ingredients from 8 cups of bread to

16 ounces, the calories drop to fewer than 300. Also, I used wine for the

oil and egg beaters for the egg substitute. And, it really serves 12,

depending on the other dishes that you serve with it.
