Here is one of our favorite weekend lunches -- a sandwich I " thunk up " a couple of years or so ago. Warning -- it's not low fat, but you could lower the fat content by using light or fat free mayo & cheese. The Yves veggie pepperoni is fat free. It is so much like " real " pepperoni, that I fooled my stepsons with it for years! I put in on their pizzas (which they thought their Dad made since I don't have anything to do with meat). Since it has no fat, the trick to using it on pizzas is to put it *under* the cheese -- otherwise it gets too dry after being cooked in the oven. My son and I had these sandwiches for lunch today, and it is one of his favorite foods.
