Chipotle Mayonnaise with Roasted Garlic

1 chipotle chile in adobo sauce -- stem removed

2 tablespoons freshly squeezed lime juice

2 cups mayonnaise

2 teaspoons minced roasted garlic

1/2 green onion -- finely minced

 

In a blender, combine the chipotle and lime juice and puree. Place the puree,

mayonnaise, and remaining ingredients in a bowl and mix well.

Hot Jalapeno Salad Dressing

2/3 cup freshly squeezed lime juice

1/4 cup olive oil

1/4 cup water

1/3 cup sugar

1 tablespoon sugar

1/2 teaspoon minced garlic

1/4 teaspoon salt

1/2 cup finely chopped jalapeno peppers -- (to 3/4 cup)

 

Combine all but the jalapenos in a jar. Shake until the sugar is dissolved,

then add the chiles. Refrigerate 8 hours before using.

 

Makes 1 cup
