Sweet Potato Tzimmes

1 large onion flakes -- peeled & sliced

3 medium sweet potatoes, peeled -- cut into 1 " cubes

1 cup whole prunes

1/2 cup dried apricot halves

juice of 1 orange

juice of 1 lemon

2 tablespoons unbleached white flour

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon salt

1/4 cup brown sugar

2 tablespoons butter or margarine -- cut into small pcs

cooking spray

 

Preheat oven to 325 ° F and spray a 2-quart capacity casserole dish.

In a large bowl, combine onion, sweet potatoes, prunes, and apricots. In a

small bowl, combine orange and lemon juices, flour, cinnamon, nutmeg, and salt;

mix until smooth.

Pour sauce over sweet potato mixture and toss to coat. Transfer to

casserole, sprinkle with brown sugar, and dot with butter. Cover tightly with

foil and bake until potatoes are very tender, about 1 hour 15 minutes.

1 medium onion -- sliced

2 cloves garlic -- minced

1 tablespoon butter or margarine

2 medium sweet potatoes -- peeled and cubed

3 cups carrots -- cut into coins

5 1/2 ounces canned unsweetened pineapple chunks with

juice

1 cup pitted prunes

2/3 cup water

1/2 tablespoon cinnamon

Salt and pepper -- to taste

 

MAKES 6 SERVINGS LACTO/VEGAN

 

This is a meatless version of TZIMMES, a side dish served during Passover

and other Jewish holidays, such as Rash Hashana.

 

In large saucepan over medium heat, saute onion and garlic in butter or

margarine until translucent, about 5 minutes.

 

Add sweet potatoes and carrots. Cook, stirring often, for 7 minutes. Add

pineapple, prunes, water and cinnamon. Stir well.

 

Cook until sweet potatoes are soft, 20 to 30 minutes. Add more water if

necessary to prevent sticking. Season with salt and pepper. Makes 6

servings.
