Black Bean Bourbon Chili

Amount Measure Ingredient -- Preparation Method

3 dried pasilla chiles -- stems & seeds removed

3 dried chipotle chiles -- stems removed

hot water

1 large onion -- chopped

1 clove garlic -- minced

2 tablespoons vegetable oil

2 cups black beans -- soaked overnight

3 tomatoes -- peeled & chopped

1/4 cup bourbon -- (optional)

1 teaspoon ground cumin

grated Monterey Jack cheese for garnish -- (optional)

 

Cover the chiles with hot water and let them sit for 10 minutes to soften.

Puree the chiles with the soaking water into a smooth paste.

 

Saute the onion and garlic in the oil until soft. Add the pureed chiles, beans,

tomatoes, and water. Bring to a boil, reduce the heat, stir in the bourbon (if

desired), and simmer for 2 1/2 to 3 hours or until done. Add the cumin and

continue to cook for an additional 30 minutes.

 

Serve the chili in bowls, topped with grated cheese if desired.
