Cheesy Chipotle Soup

1 stick margarine

2 chipotle chiles in adobo sauce -- chopped

2 carrots -- peeled & shredded

1 small onion -- finely chopped

1 cup broccoli -- finely chopped

1 clove garlic -- minced

1/2 cup flour

3 cups vegetable stock

1/2 teaspoon ground white pepper

2 1/2 cups milk

2 cups grated Cheddar cheese

2 teaspoons brown sugar

1/4 cup slivered almonds

 

Melt the margarine in a medium saucepan. Place the chipotles, carrots, celery,

onion, broccoli, and garlic in the pan and saute over medium heat for about 6

minutes, stirring constantly. Sprinkle the flour over the sauteed mixture and

mix in. Slowly add the stock and ground pepper and simmer, uncovered, over low

heat for 20 minutes. Add the milk, cheese, and brown sugar. Cook over low heat

for 10 minutes. Garnish with the almonds.
