I've never heard of Gazpacho Salad but someone posted one on the fatfree

list recently and now I see that McDougall has a Gazpacho Salad too. We

love Gazpacho Soup, so I expect that we will like this too. We're having

company for dinner Friday and I plan to make one of these.

Gazpacho Salad

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 tomatoes -- coarsely chopped

1 cucumber -- coarsely chopped

1 yellow bell pepper -- coarsely chopped

1 stalk celery -- chopped

1/4 cup chopped red onion

1/2 cup V-8 juice or Spicy V-8 juice

1/2 teaspoon Tabasco sauce

2 tablespoons chopped fresh cilantro

 

Preparation Time: 15 minutes

Chilling Time: 1 to 2 hours

Servings: 4

 

Place the vegetables in a bowl. Combine the V-8 juice and Tabasco sauce

and pour over the vegetables. Refrigerate for 1 to 2 hours, stirring

occasionally. Stir in the cilantro just before serving. Serve in a bowl

with a small amount of the juice spooned over the vegetables.

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

28 ounces canned unsalted tomatoes -- drained and chopped

2 cucumbers -- diced

1 green bell pepper -- very thinly sliced

1 onion -- chopped

2 tablespoons capers

1/3 cup red wine vinegar

1 pinch cumin

2 tablespoons chopped fresh parsley

2 tablespoons chopped shallot

2 cloves garlic -- pressed

 

Serves 6

 

Layer vegetables in glass bowl in the order shown. Mix vinegar, cumin,

parsley, shallot, and garlic. Pour over vegetables. Cover and refrigerate

at least two hours. Toss before serving.
