Korean Cabbage Rolls (Vegetarian)

1/2 carrot -- 1/4-inch cubes

2 green bell peppers -- cored; 1/4-inch cubes

1 pound mushrooms or other meaty vegetable -- see notes

2 ounces mung bean sprouts -- see directions

1/8 cup egg substitute

or 1/2 egg, beaten

2 scallions -- chopped

2 cloves garlic -- chopped

1 tablespoon rice wine

2 tablespoons soy sauce

1 teaspoon toasted sesame oil

1 tablespoon sugar

1 tablespoon sesame seeds

1 teaspoon salt

Black pepper -- to taste

1/2 cup cornstarch

6 cabbage leaves -- see directions

Chopped parsley -- for garnish

 

1. Prepare mungbean sprouts as follows: scald briefly in boiling water, drain,

rinse under cold water, and finely chop. Prepare cabbage leaves: cut into 4-inch

squares, scald briefly in boiling water, and rinsed under cold water

2. Mix carrot, bell peppers, rice or eggplant, bean sprouts, egg, scallions,

garlic, rice wine, soy sauce, sesame oil, sugar, sesame seeds, salt, and pepper.

Shape mixture into oval meatballs about 2 inches long. Place cornstarch on a

large plate. Gently roll each meatball in cornstarch.

3. Dip inner surface of each cabbage square in cornstarch. Place meatballs in

cabbage leaves and fold edges of leaves around meat to form small bundles.

4. Heat water in a steamer to boiling. Arrange bundles, seam-side down, in the

upper part of steamer. Steam for 15 minutes. Garnish with parsley.

NOTES : Yangbaechoo Mandoo are a popular family dish. On New Year’s Day they are

served in broth, along with a special rice cake, doku, a symbol of long life.

Traditionally they are made with meat as a sign of luck and prosperity. For this

vegetarian version, add fried rice, diced eggplant, parcooked yams, mushrooms,

or other " ground beef or pork " substitute (1/4-lb per serving).
