I just bought this book at Borders today (it may be cheaper through Amazon -- haven't checked): " The Convenient Vegetarian " by Virginia Messina and Kate Schumann Just seeing that this was a Virginia Messina book caught my attention. She is one of the authors (the other is her husband, Mark) of " The Vegetarian Way " which is a tremendously helpful book for vegetarian nutritional information. " The Convenient Vegetarian " is pretty much self-explanatory in that it is a " quick & easy " cookbook. One of the unique features I like is the section for " mixes " to make and have on hand to use in various recipes or on their own. Another is a section about " planovers " (another term for leftovers, sort of, but planned). They give one recipe, and then one or more recipes using ingredients from the first recipe (you make extra to put aside). I've always wanted to be this organized!! Maybe this will teach me to do this on my own without having to follow specific instructions. ha ha! This is a paperback book, 184 pages (including index, etc.), and was $14 at Borders.
