Heavenly Vegetable Soup

Amount Measure Ingredient -- Preparation Method

1/2 cup water

1 onion -- chopped

2 stalks celery -- chopped

2 carrots -- sliced

1 cup mushrooms -- sliced

1 cup broccoli florets

1 cup cauliflower flowerets

15 ounces chopped tomatoes

2 quarts vegetable broth

1 cup frozen corn kernels

8 ounces tomato sauce

2 tablespoons parsley

2 teaspoons dried basil

2 tablespoons soy sauce

1/2 teaspoon tabasco sauce

1/4 teaspoon chili powder

ground pepper

1/3 cup cornstarch

1/2 cup cold water

 

Place 1/2 cup water, onion, celery, carrots, and green beans in a large

soup pot.

Cook, stirring frequently, for 10 minutes.

Add remaining ingredients, except cornstarch and remaining 1/2 cup of

water, and cook over low heat for 50 minutes.

Mix remaining water with cornstarch and add to pot while stirring.

Cook and stir for 2 minutes. Serve at once.
