Raisin 'n Orange Oat Bran Cereal - Quaker Oat Bran

Amount Measure Ingredient -- Preparation Method

1/2 cup orange juice

1/2 cup water

1/3 cup Quaker Oat Bran hot cereal -- uncooked

1 tablespoon raisins

1 dash cinnamon

1 dash salt -- optional

 

In small saucepan, combine all ingredients. Bring to a boil; reduce

heat. Cook 1 minute, stirring occasionally. Let stand until thickened.

Serve with skim milk and sugar or substitute, if desired. Makes 1

serving.

Serving contains 190 calories and 3 g fat Diabetic exchanges: 1 1/2

starch/bread; 1 fruit

Oat Bran 'n Broccoli Casserole - Quaker Oat Bran

10 ounces frozen broccoli -- chopped

3/4 cup water

1/3 cup green onions -- sliced

1/2 cup part skim ricotta cheese

1/4 teaspoon garlic powder

1 dash pepper

2 cups water

1/2 teaspoon salt -- optional

3/4 cup Quaker Oat Bran hot cereal -- uncooked

2/3 cup Quaker Enriched Hominy Quick Grits

1/2 cup plain lowfat yogurt

 

Cook broccoli in 3/4 cup water according to package instructions with

onions. Do not drain. Stir in ricotta, garlic powder and pepper. Cook

over medium heat, stirring occasionally or until heated through; set

aside.

 

Bring 2 cups water and salt to a boil. Using a wire whisk, gradually add

combined oat bran and grits, stirring constantly. Return to a boil;

reduce heat. Simmer 2 to 4 minutes, stirring frequently, or until oat

bran mixture is slightly thickened. Add to broccoli mixture; mix well.

Add yogurt; cook until heated through. Serve immediately. Makes 6

servings.

 

Note: to substitute Quaker or Aunt Jemina Enriched Hominy Grits (not

quick), increase water to 2 1/2 cups and simmer time to 15 to 20

minutes. Proceed as recipe directs.

 

Each serving (about 3/4 cup) contains 160 calories and 3 g

fat

Healthy Oat Granola - Quaker Oat Bran

1 2/3 cups Quaker Oat Bran hot cereal -- uncooked

1 cup Quaker oats (quick or old fashioned) -- uncooked

1/3 cup instant nonfat dry milk

1/4 cup honey

1/4 cup sunflower seeds -- hulled

2 tablespoons vegetable oil

2 tablespoons water

1 teaspoon grated orange peel

1/2 teaspoon vanilla

3/4 cup dried banana chips

1/2 cup raisins

 

Heat oven to 350 degrees. Combine oat bran, oats, dry milk, honey,

sunflower seeds, oil, water, orange peel and vanilla; mix well. Spread

in 13 x 9 inch baking pan. Bake 20 to 25 minutes or until golden brown,

stirring once after 10 minutes. Stir in banana chips and raisins. Cool

completely. Store tightly covered up to 1 week, Serve cold ot hot* with

skim milk as a topping over fruit, low fat yogurt or ice milk, if

desired. makes 5 servings.

 

* To heat 1 sering hot cereal, place 1 cup granola in 2 cup

microwaveable bowl. Add 1/2 cup skim milk. Microwave on HIGH about 1

minute 30 seconds or until heated through; stir.

 

Each serving (about 1 cup) contains 430 calories and 13 g fat

Diabetic Exchanges: 2 1/2 starch/bread; 2 fruit; 2 fat; 1/4 milk

Zucchini Spears Ole - Quaker Oat Bran

3/4 pound zucchini ( up to 1 pound )

3/4 cup Quaker Oat Bran hot cereal -- uncooked

1 teaspoon chili powder

3/4 teaspoon ground cumin

1/4 teaspoon ground red pepper

2 egg whites

1 1/2 tablespoons margarine -- melted

1/2 cup salsa, homemade

 

3/4 to 1 pound zucchini equals 2 to 3 small zucchini

 

Heat oven to 350 degrees. Lightly spray 15 x 10 inch baking pan with

vegetable cooking spray or oil lightly. Cut off ends of zucchini. Cut in

half crosswise; slice each piece in half lengthwise, then again in

half. In plastic bag, combine oat bran, chili powder, cumin and red

pepper. In shallow dish, lightly beat egg whites.

 

Coat zucchini with oat bran mixture; shake off excess. Dip into egg

mixture, then coat again with oat bran mixture. Place in prepared pan;

lightly brush with margarine. Bake about 20 minutes or until zucchini is

crisp tender. Serve with homemade salsa. Makes 6 servings.

 

Each serving ( 3 zucchini spears ) contains 90 calories and 4 g fat

Diabetic exchange: 1/2 starch/bread; 1/2 vegetable; 1/2 fat

Pepper Cheese Bread - Quaker Oat Bran

1 teaspoon Quaker Enriched Corn Meal, or Aunt Jemima

2 cups all-purpose flour, (up to 2 1/2 cups)

1 cup Quaker Oat Bran hot cereal -- uncooked

2 teaspoons sugar

1/2 teaspoon pepper, (up to 1 teas)

1 package quick rise yeast

1/8 teaspoon baking soda

1 cup water

1/4 cup skim milk

2 tablespoons margarine

4 ounces low fat cheddar cheese (1 cup) -- shredded

 

Lightly spray 8 x 4 inch loaf pan with vegetable oil cooking spray or

oil lightly. Sprinkle sides and bottom with corn meal. In large mixer

bowl, combine 1 cup flour , oat bran, sugar, pepper, yeast and baking

soda.

 

Heat water, milk and margarine until very warm ( 120 - 103 F ) . Add to

dry ingredients; beat at low speed of electric mixer until moistened.

Add cheese. Increase speed to medium; continue beating 3 minutes. Stir

in enough remaining flour to form a stiff dough.

 

Turn out onto lightly floured surface. Knead 8 to 10 minutes or until

dough is smooth and elastic. Roll into 15 x 7 inch rectangle. Starting

at narrow end, roll up dough tightly. Pinch ends and seam to seal; place

seam side down in prepared pan. Cover; let rise in warm place about 30

minutes or until doubled in size.

 

Heat oven to 375 degrees. Bake 30 to 35 minutes or until golden brown.

Remove from pan; cool on wire rack at least 1 hour before slicing. Serve

as sandwich bread or as a main meal accompaniment. Makes 16 slices.

Apple Raisin Scones - Quaker Oat Bran Cookbook

1 1/2 cups all-purpose flour

1/4 cup sugar

1 teaspoon cinnamon

1/3 cup margarine

1 cup Quaker Oat Bran hot cereal -- uncooked

2/3 cup dried apples -- finely chopped

1/2 cup raisins

1/3 cup water

2 egg whites -- beaten

 

Heat oven to 400F. Lightly spray a cookie sheet with vegetable cooking

oil spray or oil lightly. Combine flour, sugar, baking powder and

cinnamon; cut in margarine until mixture resembles coarse crumbs. Stir

in oat bran, apples and raisins. Add combined water and egg whites,

mixing just until moistened. Shape dough to form a ball. Turn out onto

lightly floured surface; knead gently 6 times. Pat into 9 inch circle on

prepared cookie sheet. Score dough into 8 wedges; do not separate. Bake

18 to 20 minutes or until light golden brown. Break apart; serve warm

with jelly. Makes 8 scones.
