Guest guest Posted August 5, 1999 Report Share Posted August 5, 1999 * Exported from MasterCook * Corn and Smoked Tofu Chowder Recipe By :Dana Jacobi Serving Size : 4 Preparation Time :0:00 Categories : Soups Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil 1 small red onion -- finely chopped 1 large celery stalk -- finely chopped 2 cups light vegetable broth 1 medium potato (peeled) -- 3/4-inch cubes 1 teaspoon thyme leaves 1 cup smoked tofu -- 1/2-inch cubes 1 cup corn kernels (fresh or frozen) 1 cup plain regular soymilk Salt and freshly ground pepper 2 tablespoons minced dill or chives In a large saucepan, heat the oil over medium-high heat. Add the onion and celery and saute them until translucent, about 5 minutes, stirring occasionally. Pour in the broth and bring to a boil. Add the potato. When the pot returns to a boil, reduce the heat. Add the thyme and simmer until the potato is slightly underdone — about 15 minutes. Add the tofu and corn. Raise the heat until the soup bubbles gently. Mix in the soymilk. When heated through, season the soup to taste with salt and pepper. Ladle the chowder into bowls. Garnish with dill or chives and serve. Per serving: 193 calories; 6.8 g fat (0.4 g saturated fat; 32 percent calories from fat); 28.7 g carbohydrates; 0 mg cholesterol; 705 mg sodium; 7.8 g protein; 2.5 g fiber.
